It’s so odd not to have a blog post today for a Saturday Blog Hop. Our Create with Connie & Mary team is taking this Saturday off for the holidays. I hope you all had an enjoyable Christmas day yesterday. It was just Dave and I since none of our family traveled due to COVID. Even our beagle Ruger got in on the action:

Dave has been feeling pretty good all week:

I have been learning how to cook with a cast iron skillet lately. My newest quest. I’ve always had my cast iron skillets but they didn’t get used very much. So far everything that I’ve tried has turned out so yummy. I’ve found a lot of recipes I want to try on Pinterest and I tried two of them for our Christmas supper and they were both A+. My first one is a Cast Iron Skillet Rotisserie Chicken. You can see the easy steps here:

Followed by Cast Iron Skillet Biscuits. Dave hailed these as the best biscuits he’s ever had. The recipe makes a huge batch but you can keep the dough refrigerated for up to 5 days so I made 4 biscuits. We will be have the remaining 2 biscuits with strawberries & whipped cream sometime today. You can grab both recipes here that I used. I highly recommend them both:
